Tulie Cookie – Decorating Paste

This is a unique cookie recipe.   These cookies are more for a garnish along with another dessert.  You will need to create a shape out of plastic (ex: plastic placemat), any shape will do: teardrop, circle, oval, etc…These cookies are easiest made on a Silpat.

  • 4 ounces unsalted butter, at room temperature
  • 4 ounces powdered sugar, sifted
  • 1/2 cup large egg whites (room temperature)(slightly whisked with a fork)
  • 1/2 teaspoon vanilla extract
  • 4 ounces cake flour, sifted
  1. Preheat oven to 400°F.
  2. Create your cookie shape out of your plastic sheet.
  3. Cream together the butter and powdered sugar.
  4. Incorporate the egg whites, a few at a time.
  5. Add vanilla.
  6. Add flour and mix just until incorporated; do not over mix!
  7. Place cut out shape onto silpat.
  8. Spread tulie paste with spatula, flat and even within the template shape. You should be able to fit 4 tulie cookies on one cookie sheet.
  9. Bake at 400°F for approx 4 minutes or until there are a few light brown spots on the cookie.
  10. Remove cookies from oven.
  11. Working quickly, drape each cookie over a wide round object forming desired shape.
  12. Let cool.

 Variation:

 Chocolate Tulie Paste

Everything the same but the following ingredient changes:

  •  3 ounces bread flour, instead of 4 ounces cake flour
  • 1 1/4 ounces unsweetened cocoa powder, sifted
