- 12 oz sugar
- 12 oz lt brown sugar
- 6 oz heavy cream
- 3oz milk
- 3 oz butter
- 12 oz toasted, chopped pecans
- 1 tsp salt
- 1 tsp vanilla
1. Combine sugar, light brown sugar, heavy cream, milk & butter in a saucepan and cook to 230 degrees , stirring continuously.
2. Add pecans and salt cook to 237 degrees stirring continuously.
3. Remove from heat and add the vanilla, allow to cool, undisturbed to 212 degrees.
4. Use wood sppon, stir vigorously until the mixture begins to look creamy (about 45 seconds).
5. Using a # 50 scoop deposit pralines onto parchment paper.
Serve as soon as possible after making. Pralines look quality quickly.
