I was looking for a slightly different cookie and thought of butterscotch. Add toffee chips and pecans to the cookies and wow! I think you will be pleasantly surprised with these cookies!
- 1 1/2 C AP Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 C Softened Butter
- 1/3 C Granulated Sugar
- 1/2 Dark Brown Sugar
- 2 Lg Eggs
- 1 tsp Vanilla
- 3/4 tsp Rum Extract
- 1 8oz (Bag) Toffee Chips
- 1 C Chopped Pecans
- 1 C Butterscotch Chips
Preheat Oven to 350
Sift together flour, baking powder, baking soda & salt. Beat butter, sugars, eggs & extracts. Stir in flour, toffee chips & butterscotch chips.
Place a silpat or parchment paper on cookie sheets. Place tablespoon amounts of cookie dough about 3 inches apart ( flatten cookie dough slightly).
Cook for 11 minutes. (until edges of cookie or a light golden brown.)
Take silpat off cookie sheet immediately but don’t move cookies to cooling rack for about a minute.
Cookies should be flat and crispy.
