Oreo Cookie Cake

I think everyone secretly loves Oreo Cookies.  I love this recipe because it combines my favorite chocolate cake with a yummy cream cheese frosting and Oreo Cookies.  Can it really get any better?

Cake:

  • 1 3/4 cups (12 1/4 ounces) granulated sugar
  • 2 1/4 cup (9 1/2 ounces) unbleached all-purpose flour
  • 2 tablespoons (1/2 ounce) cornstarch
  • 3/4 cup (2 1/4 ounces) Dutch processed cocoa
  • 3/4 cup (6 ounces) buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup (3 1/2 ounces) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (8 ounces) hot water

Frosting:

  •  1 (8 ounce) package cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla
  • 14 Oreo Sandwich Cookies crushed
  1. Preheat oven to 350°F
  2. Prepare 2 (9 inch) round cake pans; greased, floured & lined with parchment paper.
  3. In a large bowl or your food processor, sift together the sugar, flour, cornstarch, cocoa, buttermilk, baking powder, baking soda and salt.
  4. Add the eggs, oil and vanilla; beat on medium speed for about 2 minutes.
  5. Stir in the hot water to batter; the batter will be thin.
  6. Pour the batter into the prepared pans.
  7. Bake @ 350°F for 30 to 35 minutes, or until toothpick inserted into the center of cake comes out clean.
  8. Cool for 10 minutes in the pans, and then turn them out to cool completely on a baking rack.
  9. Use a bread knife or cake leveler; level top of each cake. Divide each cake into two layers.
  10. Combine cream cheese & sugar in medium bowl.  Beat on medium speed until well blended.  Set aside.
  11. Combine heavy cream, powdered sugar & vanilla in mixing bowl.
  12. Beat on medium–low speed until mixture starts to thicken.  Increase speed until cream doubles and forms soft peaks.
  13. Gently stir in whipped cream to cream cheese mixture.
  14. Fold in crushed cookies just till combined.  Save a few crushed cookies aside.
  15. Place one cake layer on a serving plate, Spread top of layer with cream cheese mixture, top with cake layer, and repeat until cake is assembled.
  16. Frost the sides & top of cake.  Sprinkling top of cake with remaining cookie crumbles.
