I love indulgent recipes! This happens to be one of them. New York Crumb Buns are a cinnamon roll with yummy cinnamon crumbs on top. Trust me these will go fast.
Dough:
- 1 cup warm water
- 1 cup warm whole milk
- 4 ounces unsalted butter
- 2 large eggs
- 1/3 cup sugar
- 1/2 teaspoon salt
- 6 cups unbleached all-purpose flour
- 2 1/2 teaspoons SAF instant yeast
Filling:
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
Crumbs:
- 1 3/4 cup unbleached all-purpose flour
- 3/4 cup granulated sugar
- 6 ounces unsalted butter
- 1 tablespoon cinnamon
- 1 pinch of salt
- 1/2 teaspoon vanilla
- Powdered sugar
- Combine warm liquids with butter and sugar and allow butter to melt.
- Add eggs.
- Add enough flour to make a fairly soft dough. Add yeast, then salt. Knead until smooth and elastic.
- Ferment until doubled, about an hour. This will be wetter dough.
- Combine filling ingredients and set aside.
- For crumbs, combine all ingredients except powdered sugar and mix by hand, until crumbs are formed. Do not over mix!
- Roll out dough into an 18” x 26” rectangle. Brush with melted butter and sprinkle with filling.
- Roll up jelly roll style and cut into 1” pieces.
- Place on buttered half sheet pan touching one another. Brush tops with melted butter and top with crumbs.
- Proof until doubled, about 40 minutes.
- Bake @ 400°F for 15 – 20 minutes.
- When cool, dust with powdered sugar.
