Cloverleaf Rolls

Is a meal really complete without the dinner rolls?  This recipe is a little time consuming but easy to make.  If you have kids they can assist you on the final stage of rolling the dough balls and assembling the cloverleaf.

  • 3 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup scalded whole milk
  • 2 teaspoons instant yeast
  • 1/4 cup water
  • 3 1/2 -4 cups unbleached bread flour
  • 2 large eggs
  • Egg wash

 

  1. Brush melted butter over the inside of standard sized muffin tins.
  2. Scald milk and remove from heat.
  3. Add butter, sugar and salt.  Allow to cool to lukewarm.
  4. Add yeast to milk mixture and add 1 cup flour, mixing until well blended.
  5. Add eggs and beat again until smooth.
  6. Add remaining flour and mix for 10 minutes.  Allow dough to double in size.
  7. Punch down and allow to rest for 5 minutes, under a bowl.
  8. Cut dough into 1/2 ounces balls and place 3 balls into prepared muffin tins.
  9. Allow rolls to double in size, this will take about 30 minutes.
  10. Brush with egg wash.
  11. Bake @ 375°F for 15 minutes.
