This is a recipe I found on the internet. I like it as a variation to basic peanut brittle. If you try it and find it not spicy enough. try substituting the extract for cinnamon whisky or liquor for a slightly stronger punch.
- 7 ounces granulated sugar
- 3 ounces water
- 5 ounces corn syrup
- 1/2 pound peanuts
- 1/8 ounce salt
- 1/2 ounce unsalted butter
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cinnamon extract
- 1/8 teaspoon vanilla extract
- Add water, sugar and corn syrup to pot and bring to boil, stirring constantly.
- Clean sides.
- Cook to 240 degrees F with out stirring.
- Add peanuts and salt and stir over heat until reaches 310 degrees.
- Remove from heat quickly and stir in butter and extracts.
- Pour mixture over silpat.
- Butter hands and pull brittle until thin.
- let cool.
- break into small pieces.
