Date Rice Krispie Cookies (Strawberries)

I’m not sure where or who my mother got this recipe from originally but, I know we use to make them almost every year when I was younger at Christmas.  These are different from your regular cookie, especially because of the special ingredient “dates” but, trust me on this one you’ll be hooked after the first bite.  They also give a nice variety to a cookie tray.

  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1 1/2 cup chopped dates
  • 1 large egg
  • 1 teaspoon vanilla
  • 3 cups rice krispies
  • 1 1/2 cups pecans
  • red sugar (amount may vary)
  • green frosting with leaf tip
  1. Melt butter and sugar, stir until dissolved.
  2. Add dates; cook until dates, sugar and butter are well mixed.
  3. Add beaten egg; cook about 5 minutes.
  4. Add vanilla.
  5. Pour over rice krispies and add pecans.
  6. Cool, roll into balls.
  7. Roll balls into red sugar.
  8. Decorate with green frosting to make a leaf on your strawberry.
