This is a recipe I found on the internet. I like it as a variation to basic peanut brittle. If you try it and find it not spicy enough. try substituting the extract for cinnamon whisky or liquor for a slightly stronger punch.
7 ounces granulated sugar
3 ounces water
5 ounces corn syrup
1/2 pound peanuts
1/8 ounce salt
1/2 ounce unsalted butter
1/2 teaspoon cinnamon
1/8 teaspoon cinnamon extract
1/8 teaspoon vanilla extract
Add water, sugar and corn syrup to pot and bring to boil, stirring constantly.
Clean sides.
Cook to 240 degrees F with out stirring.
Add peanuts and salt and stir over heat until reaches 310 degrees.
Remove from heat quickly and stir in butter and extracts.
