So my hubby loves Bailey’s. So, I figured it was a must that I had to try making Bailey’s flavored ganache. I use this recipe to fill my homemade chocolates.
- 8 ounces (227 grans) bittersweet chocolate chopped finea
- 3/4 cup (180 ml) heavy whipping cream
- 2 tablespoons (28 grams) butter
- 1/4 cup plus plus 2 tablespoons Bailey’s Irish Cream
place chopped chocolate in a medium sized bowl. Set aside. Heat cream and butter in small saucepan over medium heat. Bring to boil. Immediately pour the boiling cream over chocolate and allow to stand for 5 minutes. Stir with whisk until smooth. Add liqueur.
transfer the mixture to a medium bowl and cover with plastic wrap. Refrigerate until cool and texture resembles firm cream cheese, 1 to 1 1/2 hours.
with electric mixer beat the mixture at high speed until fluffy, mousse like and the mixture forms stiff peaks 1 to 1 1/2 minutes.
